Soba noodles with broccoli, prawns & sweet soy dressing
Takes only half-hour to cook and serves four
Ready in 30 minutes
Serves 4
Ingredients
200g soba noodles (buckwheat)
200g broccoli, cut into small florets
100g large, cooked prawns
1 red pepper, cut into matchsticks
1 lime, cut into wedges
Sweet soy dressing
6 tbsp ketjap manis
1 medium red chilli, seeded and chopped
1 garlic clove, finely chopped
1 tbsp ginger, finely chopped
2 limes, juiced
Method
1. Boil the soba noodles for five minutes or until al dente. Drain and rinse in very cold water. Drain again and put in a large bowl. Blanch the broccoli in salted water until al dente. Drain, rinse in very cold water, drain thoroughly again and add to the noodles.
2. Combine the dressing ingredients in a small bowl. Pour over the noodles, add the prawns and peppers and mix well. Serve with lime wedges.
